Tetsu Kaminakaya is a highly accomplished Japanese and Sushi Chef with an exceptional career spanning over 25 years in traditional Japanese cuisine, now bringing his mastery to New York City. For 13 years, he refined his expertise as a dedicated Head Chef and Manager in Hiroshima, mastering diverse culinary concepts from Sushi and Kappo (fine dining) to Yakitori and Ramen across multiple dining establishments. This journey underscores that true culinary excellence is often forged in local, dedicated establishments, and his arrival serves as a testament to the uncompromising quality and high standards maintained by Japan's regional, yet world-class, restaurant scene. Since 2011, Chef Kaminakaya has successfully operated his own thriving venture, Japanese Restaurant HANABI, serving as the Owner and Head Chef, personally overseeing all culinary creation and kitchen leadership.
